Wagyu beef is very exclusive. The beef is only produced by four specific breeds of beef cattle that are raised in Japan’s Kobe Region.
The breeds used to generate Wagyu beef are:

- Japanese Polled

- Japanese Shorthorn
Since Japan is an island and was forced to be self-sufficient for so long, a great deal of effort went into developing the best possible beef cattle. Evidence indicates that the cattle that currently produce the Waygu beef foodies love was developed shortly after the Meiji Restoration in 1868. Breeders used the opportunity to cross the native cattle they’d been using as both food and draft animals with imported European stock. The crossbreeding continued until 1910 when outside genetic influences were no longer allowed.
Japan is very proud of the high-quality beef they produce. Not only does the breeder take care to make sure only the best genetics are passed on, but the country has declared the Wagyu herds a national living treasure and doesn’t allow the export of the live animals.
